Easy Mini Apple Pie Recipe

This recipe is so much fun and family friendly, if your kids are like mine and enjoy helping in the kitchen! Theres a number of ways to make it and everyone does it with their own personal twists, but this specific mixture is my personal favorite. Enjoy!!


Ingredients:
  • One box of Pillsbury Ready-to-Bake Pie Crusts
  • 4 medium Honey Crisp apples peeled and diced
  • 2 tbsp of unsalted butter
  • 1/4 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1 tsp of ground cinnamon
  • 3 tbsp of apple juice
  • 1 tbsp of all-purpose flour

Instructions for pie filling:

1. Preheat oven to 400 degrees F
2. Peel and dice apples.
3. Melt butter in a large pan on the stove on medium heat.
4. Slowly stir in apples, sugars, sound cinnamon, and apple juice.
5. Cover and simmer for around 5 minutes or until apples begin to slightly soften.
6. In a small bowl mix 1 tbsp of cornstarch and 1 tbsp of apple juice.
7. Slowly add the cornstarch/juice mixture into the plan while continuously stirring.
8. Continue to cook for another 4-5 minutes, or until apples are soft and the filling is thickening.
9. Let the filling cool off before using it.
10. Time to get creative!

After you've finished your filling and you're letting it cool, it's time to start on the pie crusts.
You could really make it as complex or as simple as you want. Before you do anything else, grease your pan!!! As you can see in the picture, I was playing around with different styles and techniques. I used circular cookie cutters to give myself a good form to work with when putting them into the muffin tray. It takes some time but eventually the crust will sit nicely in each. Make sure you leave a little bit of a lip on the top of each pie bottom- you'll need that at the end when you're folding the edges. After you're finished with your bases spoon the pie filling in to your desired amount *remember: the filling will cook down, so put just a bit more than you think you'll need.*. Once you've got all of your pies filled, toy around with different styles and really make it your own! Then when you've finished fold and tuck the edges over on each pie (folding toward the center).

11. Put pies in oven for 15-20 minutes
12. Allow pies time too cool before attempting to remove from muffin tin. 



Enjoy warm with a scoop of vanilla ice cream!!!
